Indian Cabbage Salad
Green or purple cabbage (finely shredded) 4 cups
Red onions (finely chopped) 1/2 cup
Green bell pepper (finely chopped) 1/2 cup
Raw peanuts 1/2 cup
Ground Cayenne 1/2 tsp
Curry leaves (finely chopped) 10 - 12 pieces
Cilantro (finely chopped) 2 tbsp
Asafoetida powder (optional) 1/4 tsp
Black mustard seeds 1 tsp
Vegetable, corn, or peanut oil 2 tbsp
Lemon juice 1 tsp
Method
Mix the cabbage , onions, cilantro and bell pepper. Heat the oil and add the black mustard seeds and peanuts. Fry till the peanuts change color and are done. Put off the fire and add the curry leaves , asafoetida and cayenne. Pour this into the cabbage mixture. Add salt and a tsp of lemon juice and mix well. Serve after 15 minutes.
